Fresh Cranberry Pear and Orange Curd Pie
I guess it's because of Thank Giving dinner. There were fresh cranberries all over the markets which it was quiet difficult to see them in other seasons.
So I decided to make something using fresh cranberries, and 'VOILA!
Here's the fresh cranberry pear pie.
This is my first time decorating pie with left over dough because I couldn't even imagine doing some extra work while I have to focus on rolling and lining the pie crust.
Every time when I line the pie crust, the butter melts and crust is broken.
But this time, with my new genius rollingpin - Joseph Joseph Rollingpin - I lined the crust with no problem and even I had enough time do cut them in a small leaf shape before the butter melts.
When I bake a pie, there is another issue other than lining the crust.
Baking time! has been very tricky for me because I tend to take out the pie dish a little sooner than It should be in the oven.
2 or 3more minutes! This is where my patient is tested.
This time, fortunately, the pie came out from the oven at just right time!
I found the trick! For pies, overbake is better than under bake. haha.
I am pretty happy with its colour, texture, and the taste!
I was worried about the sharpness of cranberries, but with sweet pear and smooth orange curd, it was well balanced and a bit of sour taste was delightful.
Well, I guess I will make different pies with various decoration. But next time, I'd better use a cookie cutter :)
